Hey there! Chef Ashley here and before we jump into our recipe, I've got a little extra help and tips for you that you might find useful! It's a quick read, but if you're in a hurry, feel free to skip straight down to the recipe.

Chef's Dictionary:

  • Cream: This is a method used in baking where softened butter and sugar are beaten together until light and fluffy.

  • Fold: This is a gentle mixing method used to keep air in the mixture. You cut through the mixture with a spoon or spatula, go under it, and then fold it over on top of itself.

  • Bake: To cook in an oven. In baking, heat is gradually transferred from the surface of the dough, transforming it into a baked good with a firm dry crust and softer center.

Kitchen Hacks:

  • Softening Butter Quickly: If you forgot to take the butter out of the fridge ahead of time, grate the cold butter using a cheese grater. It will soften in no time!

  • Keeping Brown Sugar Soft: Keep brown sugar soft by storing it with a small piece of bread or a couple of marshmallows. They will provide just enough moisture to keep the sugar from drying out.

  • Freezing Cookie Dough: If you don't want to bake all the cookies at once, you can freeze the dough for later use. Roll the dough into balls, place them on a baking sheet, and freeze. Once frozen, transfer them to a resealable bag. When you're ready to bake, just add a couple of extra minutes to the baking time – no need to thaw!
